Yaupon tea: getting started

I have been working on my yaupon tea for the past year. I have 3 batches almost ready, green, light roast, and mesquite dark roast.
Green is a light fresh tea. The leaves are dried but not roasted. Best when steeped and served hot or cold.
Light roast is a smooth tea perfectly roasted to bring out the naturally sweet taste and aroma. Light roast is the perfect alternative to traditional black tea.
Dark roast is bold and allows the dark carmel notes to shine. Coffee drinkers will find the dark roast a welcome change.
